openattic run well on squeeze. The installation is a little bit tricky, but look here: http://www.open-attic.org/de/dokumentation.html you need backport.sh (and perhaps manual install some packets).
Filesystem for fileserver-VM is not nessessary (on pve-host), if you use lvm-storage. Inside I would go for ext4 (can later updated to btrfs).
