New to ProxMox and stabillity

We are looking into ProxMox as a replacement for small production setups with with ESXi. So far I have 3 older HPE DL380 Gen9 servers running in a 3-node cluster and trying to setup Starwind vSAN in a test scenario

But.. so far I have had about 7-9 crashes (in 3 days) where a server stalls completely and I have to take power off to get it back. I am a bit baffled this is happening as I have heard nothing but good things about ProxMox. The crashes have occurred right after a clean installation and a few hours of idle time to the latest where I was configuring network HA for vSAN.

So a few questions before I continue my adventures with ProxMox and vSAN.
- I am running latest ProxMox version and wonder if previous version would be better to use with older hardware (I have tried to swap out hardware to exclude hardware errors)
- are there any logs to check why the system stalls randomly on different servers (I have checked journalctl, but it does not give me much)
 
Running PVE 9 on DL360/380 Gen 8-10 without problem.
You can install rsyslog, attach monitor for kernel dump, maybe there will be something not in journal.
It's standard debian anyway.
Other thing - firmware, power, etc etc etc.

Thanks will go ahead with this and see if I get closer to a reason for the crashes. Just started over with the knowledge I have learned from the first POC setup.
