OK so I added the alias under datacenter \ firewall \ alias in the proxmox ui and now I can ping the ip, however I repeated the same steps for a different server and different ip and now I can't ping the new one.

Just create a new VM with the name and spec of the old one. Then copy the original disk image over the one created when you setup the new VM

OpenVZ templates are available within the Proxmox UI.
For KVM you upload the ISO build and configure the VM and then you can convert that to a KVM template.

Take a look on the wiki there is a section on how to install Debian wheezy and then promox on top of that as above the iso will wipe the whole hd

If it's only going to be a file server you won't proxmox. I would recommend trying Zentyal community edition as its learning curve is very simple as is its install. Or you could install proxmox and virtualise Zentyal on it.

You have options to pass through your SSD. Do you use a SAN or NAS in your setup? If so you could add it there and use LVMs or install it in the local server and use LVMs on it that way. Or you could share it from another machine viva NFS
