OMV sollte auf einer virtuellen Festplatte keine Probleme machen (SMART fehlt halt) sofern man ext4 benutzt. Ich hatte es damals auch so verwendet bevor ich auf mein debian CT mit manueller Verwaltung umgestiegen bin.
Aber besser geeignet als die hier ebenfalls diskutierte Variante den Fileserver (NFS/Samba) direkt auf dem Host zu betreiben. Und unpriviligiert ist auf jeden Fall schon mal besser isoliert als priviligiert, da das System dort ja by Design keine...

kurzes Update. Habe nen zweiten PVE Host hochgezogen, auf den gleichen Stand gebracht wie der erste, zwei LXCs gedumpt, dann auf dem ersten gestoppt und auf dem zweiten Host wiederhergestellt... Das hat alles wunderbar geklappt...

Why not keep storage2 and OS on the current PERC740P and get another HBA for creating a new zpool with direct access to the disks and special device?
If you have enough disks you can first do an offline copy of the current datastore from storage1...
