Right now it is on 10G but moving to 100G once I am 100% sure I have the 100G working properly. later today adding cross connect cables between the two 100G switches...

So when you add the 9th disk with 14 TB, you will not gain 14 TB more free space...

I had a similar problem. I disabled the cache in virtiofsd when mounting the filesystem to the VM. Option: --cache=none The problem stopped occurring.
