If I create a ZFS pool in TrueNas and present it to Proxmox via Fiber Channel, are snapshots possible?

If you mean via ProxMox then I think so yes. It could be that you first need to create an storage in proxmox at the Datacenter level in order to take snapshots to the TrueNas storage.
