Windows Server bitlocker

In a VM I do not thinking that this matters. Maybe you will waiting a wile and when luks will be fully supported for zfs you will be more happy compared with bitloker(8 different keys for unlock the volume)
 
Bitlocker with Password can be used on all underlying systems.
So yes you can use it and need no spezial support form the host side.
