I apologize in advance:
I'm not experienced with forums. I've acquired my Linux (Univention, Debian, Ubuntu) experience myself, and I'm currently on the way to doing the same with Proxmox.

I would like to set up the following scenario in my small company (approx. 10 employees):

Physical Server 1:
Univention DC Server (it will replace the old physical DC Server) as a VM in PVE.
Reason: Implementing it as a VM will allow me easier backup/snapshot and maintenance options.
If I've read this correctly, that makes sense, right?
No further VMs are planned on this server.

Physical Server 2:
Univention Backup DC Server (it will replace the old physical Backup DC Server) as a VM in PVE.
File server, backups, data repository
Windows 11 (as a remote workstation) as a VM in PVE.
Reason: See Server 1 and fewer physical PCs that need to run continuously.
No further VMs are planned on this server.

The physical PCs should be sufficiently powerful for the purposes:
Server 1: 64 GB RAM, 2 x 4 TB SSDs (server SSDs)
Server 2: 64 GB RAM, 2 x 2 TB SSDs (not specifically for servers, but with high MTBF & TBW), 2 x 20 TB HDDs (server)

I've tried and read a lot and come across the following problem:
I installed both Proxmox servers with ZFS mirroring on the SSDs using the settings suggested during the installation process. Both are running stably, as far as I can tell.
However, when setting up and installing the VMs, I noticed that the VMs are stored as RAW files in the Proxmox rpool (local-zfs). Therefore, based on my mundane knowledge, snapshots of the VMs cannot be taken, as this is only possible with cqow2. However, since the VMs are not found as "files" in the classic file system, but rather as containers in the ZFS pool, converting them to qcow2 is very complicated (I've managed it thanks to various forum posts). However, I was unable to take snapshots of the VMs afterwards.

The question is whether I should set up Proxmox in a different "basic configuration," or which configuration for the two Proxmox servers (or even for Server 1 without Proxmox and Univention directly installed) makes sense in your opinion.
