When to add additional Services on Proxmox and when to choose a VM?

I'm pretty new to the whole concept of virtualization, still need and want to learn a lot!
So, I installed Proxmox on my home server the other day, and am now going through the learning curve ;-)

The first thing I'm trying to get my head around is how to organize services most efficiently and securely.
I'm getting the drift that one is not supposed to install services on the Hypervisor itself. I'm assuming this has something to do with security and ofcourse would also circumvent the whole idea of virtualization in some ways.

How would you decide if you'd run an service on Proxmox, and when to choose a VM for it?
Would love to hear your opinions and/or cases!
