Whats the ideal CPU for a Dell R720?

I'm planning to build a Proxmox server to host around 7-8 VMs for various applications like Active Directory, Pi-hole, Grafana, Graylog, Elasticsearch, and more. One of the VMs will require high performance for capturing multiple media streams and storing them on a TrueNAS-based filesystem. I'm considering using a Dell R720 for this setup. My primary focus is finding a CPU that balances low power consumption with the necessary performance to handle these tasks effectively. Kindly advice me on the CPU for this?

But even e.g. E5 2650L v2 is underwhelming nowadays:

These are all EOL products.

If this is for homelab, a mini PC is a better investment. Or something like HP Microserver G11 with E-2434.
