Great software you've created!

Since I've been using PCI passthrough, I'm interested in using virtio-mem.

The website https://virtio-mem.gitlab.io/ suggests that it's supported on Linux guests.

Does Proxmox already support it, and I just can't understand or find it, or is it still in development?

I searched for "virtio-mem" but couldn't find any information at all. When I searched for virtio-mem, I found many threads that don't exactly mention virtio-mem.

Hi,
not currently supported, but patches to implement it were proposed: https://lists.proxmox.com/pipermail/pve-devel/2023-June/057690.html but likely needs to be rebased now and IIRC, the granularity for the max parameter was considered too large, so it wasn't applied yet.
