Upgrade 7.0 to new version

Trying to find info what is the best way to upgrade Proxmox server.
I understand I can do that from CLI and GUI

# apt-get update
# apt-get dist-upgrade

But do I have to shutdown all the VM?, I guess I need to reboot the machine?
I maybe even have to physically stand beside it (it is a friend of my that I going to upgrade his Proxmox) becurse it also have pfsense that is the center of his network.

If you have a cluster you can online-migrate the VMs to another node then do a reboot for the upgraded node. After the upgraded node back online then you can re-migrate the VMs to the main node.

The reboot is required only if the pve-kernel gets updated.

It is no cluster, just a single Proxmox server so maybe is a good idea to shutdown VM.

I just want to make it as easy and nice as possible and I guess that go from 7.0 to 7.3 it have a new pve-kernel?
