Storage Configuration Advice

Hello! I am planning on moving my existing TrueNAS Scale server to Proxmox (possibly virtualizing TrueNAS via passing in HBA, haven't decided) to get a better experience virtualizing workloads. My needs are currently pretty classic homelab stuff; Plex, *arr stack, Home Assistant, Frigate, NextCloud, etc.

I've been reading a lot about the use of consumer SSDs and NVMe drives and while I expect I'll eventually get some enterprise grade SSDs, I was hoping to get some advice on how to properly configure what I currently have to extend their life as long as possible and have minimal headaches in the future. I'd also be interested in if there are obvious upgrades to make now to save me trouble in the short term.

What I currently have:

CPU: Intel Xeon E3-1275 v6
Memory: 32GB

OS Storage: Samsung 980 250GB NVMe
App Storage (ZFS mirror): 2x Samsung 970 EVO Plus 500GB NVMe
Data Storage (3x 2-wide ZFS mirrors): 2x WD Red CMR 3TB, 2x WD Red Plus 6TB, 2x WD Red Plus 6TB
Misc Storage (ZFS mirror): Samsung 860 EVO 500GB, Crucial CT512MX 500GB

I have backups so I can start from scratch and wipe the disks if necessary. I'm really mostly trying to figure out a way to utilize the consumer SSD/NVMe drives in a way that doesn't completely suck.
