starting with 2 servers please help me with your best practices?

I'm pretty new to Proxmox but have been playing with it for a few months now in a dev environment.

Now I'm ready to take the plunge and put in 2 production servers. I'm hoping you can give me some advise on the best way to set it up. Its for small business <50 employees.

I have 2 identical dell poweredge 1950 servers (Xeon Clovertown) ,each with 8 gig memory, raid1(hardware controller), 146GB drives (2).

The VMs I want to run on this cluster are:
vm1: LAMP running Vtiger CRM
vm2: Win2003 server
vm3: Zimbra
vm4: Big Blue Button
vm5: possibly PBX (asterisk or freeswitch)

How would you recommend I allocate/partition the drives, and deploy the VMs? Should I leave both servers using raid 1?

Should I just install proxmox and leave everything as default?

Best backup strategy with what I have available?
What happens if when master goes down?
Any other thoughts?
