setting up RAID disks as storage

I've just installed Proxmox for the first time and I'm trying to get my head around storage. My server has two disks (excluding the system disk) that I want to set up as RAID 1 and dedicate to a single machine. Am I better setting the RAID up in Proxmox then giving the VM a disk as normal or is there a way to pass the two disks through to the VM and allow it to set up RAID?

Which ever way is better is there a good guide for it? I know how to setup RAID on the Linux command line but not sure if I should do that or use the web GUI.
 
I've not got hardware RAID. What is the best way to do it in software.

The story behind this is one of the VMs I'm running will be FreeNAS so I want it to have direct access to the disks for speed of access. I've a third disk in the machine that will act as storage for the other VMs I'll be running but they will be OK using normal virtual disks.
