Seeking config advice!

I currently have Proxmox up and running on the SSD with 5 drives reading on the HBA. I've been able to pass the HBA to a Windows VM and access the drives and enable sharing to my Windows desktop. I don't know if my HBA is IT mode or not.

I've created a server with some old hardware to host some Steam game servers and Plex. I'm seeking guidance on hard drive configurations and general setup. I will be away from the rig for approx 5-6mo out of the year, the rest of the time I'll be by it for immediate needs. This is all new to me, as I've never touched Linux or anything like this. I'm a savvy programmer, but command-line stuff has always been avoided, when possible. I have endured the creation of a Hackintosh on multiple occassions, however. I've about hit my limit on what I want to put into this, money wise, but can get more HDDs if recommended. I'd rather set it up right the first time.

Hardware:
7700k
32gb ram
250gb ssd (OS)
5x 12tb Ultrastar (I can get more, if needed @$85/ea) - 5yr warranty (goharddrive)
9300-16i HBA card
Fractal Define 7

I've got around 2tb of backup data, which will slowly increase in size (photos, business, etc). The rest of the storage is used almost exclusively for Plex. Game servers will be stored on the SSD or another SSD that I would add. I estimate my current Plex needs to be around 6tb, but want room for overhead, as I'll be sharing with friends/family, and may also add media for their needs.

First question: Which hard drive config is optimal?
Options 1-3 would be using a single 12tb as a cold backup, which I would plug in every so often and bring with me when I leave:
1. Two mirrors of 2x12tb each. Store TV episodes on one, Movies on the other. Place a copy of Backup files on either one.
2. Two raid1's of 2x12tb each. Store TV episodes on one, Movies on the other. Place a copy of Backup files on either one.
3. 4x12tb RaidZ1. Store everything on the zfs (including a copy of Backup files).


Hard Drive config options - Alternate - Buy a cheap 4tb for cold storage for Backups.
4. 5x12tb RaidZ2. Store everything on the zfs (including a copy of Backup files)
5. 6x12tb RaidZ2. Store everything on the zfs (including a copy of Backup files)

6. Use xfs instead?
7. ????


Second Question: How do I properly config Plex/ZFS/HDDs so I can easily remote in to download additional torrents, and also to access the files from my desktop? I attempted to configure SMB, but haven't gotten it to work. Is there a more GUI-friendly way?
