This is where it shocks me

PV VG Fmt Attr PSize PFree
/dev/sda3 pve lvm2 a-- 111.00g 13.75g

It takes 87.61% (97.25 GiB of 111.00 GiB)

Proxmox takes 97 Giga for an installation ?

no that space is used by the thinpool 'data' which can be used for vm/ct disks
it just so happens that an lvm thinpool is a lv inside a vg and that takes space

Ah! It does not seem to me that I use thin-pool.

Finally, if you tell me it does not matter.
I will ignore the thing.

if you want to use the vg and not the thinpool then of course it matters since the thinpool uses the space of the vg
