I would like to know if we install proxmox over debian instead of using the official iso, is the support offered by the license still applicable?

Also, what are the advantages and disadvantages of installing proxmox on top of debian instead of using the official iso in a production environment for a secure infrastructure?

Yes, this is supported. But care must be taken to do it correctly, as it isn't exactly trivial.

But we recommend using the official installer if possible, e.g. you don't have special requirements like encrypted root partition, special partition layout etc.

Disadvantage is definitely the added complexity to do it correctly, see the guide. But in the end it really depends on your environments and your goals. Advantages depend on what you are trying to do.

If you can elaborate a bit more on what exactly you are trying to achieve, it would be possible to better discuss this - otherwise it's pretty much guessing, "secure infrastructure" does not say much.
