Proxmox password keeps changing?

Hi,
I try to login to my Proxmox with the username root and the password, however the password fails.
The password seems to change itself.
This has happened over 5 times now, so I'm trying to fix this so it stops happening.
I can't use the Linux command to changed the password, namely: passwd root because I can't login to the Proxmox server.
I have tried accessing the grub, however the walkthroughs never work on the Proxmox server.

Any suggestions welcome on how to stop the password changing, or how to change the password with passwd root by accessing the grub.
 
Must be hacked, as I've had to rebuild Proxmox several times now. So hard to confirm who or when it happens though.
I don't know if Proxmox had an access log and password log to check what's happened.
Anyways, if I could get into Proxmox's GRUB, I could then reset the password without rebuilding the Proxmox machine, but the GRUB boot doesn't function properly, stopping me using the password reset command.

Any suggestions on how to get Proxmox's GRUB working properly so I can reset the password?
