You set a retention, so it will remove old backups. See the backup retention tab when editing your backup job or backup storage.

If the new backup fails (failure), will the old backup be deleted and I will be left without a backup?

no, pruning of old backups is only done after a successful backup of course. If you ever run into a situation where that is not the case, please file a bug report on our bug tracker: https://bugzilla.proxmox.com/

P.S. I did this - you just need to manually write the time and day of the week

It will show you some ready-made option AND you can type in your custom schedule. That dropdown is actually also a textbox. Thats why the default value is "Editable".
