Might be worth adding a step to enable maintenance mode https://pve.proxmox.com/wiki/High_Availability#_node_maintenance to the instructions.
I forgot to do this and had one of the nodes get fenced mid-upgrade which caused some "fun" which then required me to use the OOB to get it back online again as networking didn't come up. (Probably because OVS hadn't updated yet)
Also ceph likes to spam the console if it can't connect.

Looks like if you use OVS networking then the node gets dropped off the network during the upgrade, that will also explain the fencing
