I solve this but wanted to make a post for anyone looking.
My system:
2x Intel NUC 12 Extreme PC 12th Gen i9-12900 64gb RAM
Proxmox: 8.1.3
I have a ubuntu base LXC running Plex. It works great! However every 2-4 days my NUC would just crash hard. Cursor on the screen connected locally would be frozen etc. When I would reboot there would be no log messages before the crash anywhere in Plex or Proxmox. I spent 2 months trying to figure this out. My gut told me it was a hardware issue.
I finally went into BIOS and disabled bluetooth and audio. No crashes since and it's been stable for a few weeks. My guess it was the Bluetooth adapter. However I have no proof as there was nothing logged.
This was happening on both NUC's so it was not a random hardware issue.
