I have been using ESXi freebee and or the baby "Essentials" versions for many years. I keep things simple and need to host a few VM's for AD/SAP-HANNA on SUSE/File-server for a small workgroup of 40 people. Nothing fancy. I bought a new Dell Server with 2 x Intel Xeon Silver 4310 CPU's and a PERC H755 RAID Controller and 8 x 2.4GB 10Krpm Disks and 6 x 1.92TB "DELL" (Samsung) SSD SATA Disks and 256GB RAM... just for the hell of it.
Now I want to install the hypervisor in a simple ESXi kinda way...I had already set up the 6 SATA SSD's in RAID6 and the 8 Hard Drives in a second RAID 6 config. Then I rolled up my sleeves and came here...I see mention of ZFS requirement for the drives...I figured it is best to actually RTFM for once in my life...
Can anyone point out a decent ProxMox VE Walkthrough for Enterprise-class servers like the DELL? I am also of course happy to buy a support subscription to support the community.

There's no requirement for as even you cannot zfs send/recv replicate to other server as just operating one this time.
You can just install with xfs or ext4 as pve install option and if you want run your vm/lxc in lvm or on filesystems on your already done raidsets.
 
No, just if you want to use zfs send/recv replication. We operate 5 node cluster (+ (xfs-)nfs fileserver) without using zfs features (each mirror boot: 2 on xfs, 1 on ext4, 2 on zfs).
