[SOLVED] Newbie Migrating TruNAS VM (And others)

Good Day,

So the last few months I have been having problems with my Proxmox server.
It freezes/crashes between 5 times a day, to once every 5 days, super inconsistant.

I have come across new hardware, and would like to migrate.
Here's the situation:

Current Server:
CPU - Intel(R) Core(TM) i7-3770K CPU @ 3.50GHz​
RAM - 32GiB DDR3 1600 MHz​
disk0 - 256GB SSD​
disk1 - 3TB HDD​
disk2 - 3TB HDD​
(disk1 & disk2 are used in a TrueNAS VM)​
New Server:
CPU - Ryzen 5 3600​
RAM - 32GiB DDR4 3000 MHz​
disk0 - 1TB M.2 SSD​
Current VM's running on my server are:
100 (Immich)​
101 (Plex)​
102 (TrueNAS)​
200 (HomeAssistant)​
I also have a few storage locations:
localnetwork (homelab)​
TrueNAS (homelab)​
local (homelab)​
lcoal-lvm (homelab)​
My intention is to move my server from the current to the new.
I have made backups of all VM's, except for TrueNAS...
The main issue I am struggling to figure out is how to backup/migrate the TrueNAS portion.
When attempting to back up the VM, it says it is backing up 6TB (the two drives combined)

I clearly don't have enough space for this.

What would be the best (and easiest for a new user) to migrate between the two servers?
If I could do a "plug and play" option that would be first prize:
Shut down VM's
Shut down Host​
Clone 256GB SSD to 1TB NvME​
Move 2x 3TB HDD's to new server​
Expand storage of boot drive (to the now 1TB)​
Pray it works when booting.​
If "plug and play" is not possible, what's the best method of this type of migration.
Note that all my "important" data is on the TrueNAS VM, my other VM's store information on the TrueNAS VM via network shares etc.
