New to Proxmox and need help starting up

I found a couple of optiplex 3070s for dirt cheap and decided I wanted to start tinkering with stuff. Decided to use Proxmox to run a cluster. Nothing major, some k3s/k8s with a small file server and small media server.

I have a m.2 slot and a 2.5 SSD for storage. was going to run them as a cluster but don't know if I should put the OS on the nvme or the SSD. I've just diving into the whole home lab thing and just don't know exactly where to start.

I figured upgrading all the machines to 32gb ram would be my first thing and then deciding on the drives. Was thinking of just a small drive for the OS 256GB or so and bigger storage, but like my earlier question I don't know what one to get in what size. Someone elsewhere suggested an USB SSD for the boot to give myself even more storage but wouldn't that slow down the nvme drives to SSD speeds? Making the money spent on a nvme not a useful?

Any tips, tricks, or mistakes to avoid when first starting out would be helpful. Thank you
