New small build recommendations

Ok after a few weeks of experiments and basic idea of usage i am ready to setup a small home server.

I got an i7, some 16gb ram and then disks as follows:

One SATA SSD 500gb and two 7200rpm 1TB spinners. Total 3 drives.

Now.. if i just do the installation on the SSD and put the VMs in there for speed purposes, i am not getting the mirror protection with the single drive, the SSD would be a weak point..
then i guess i can RAID1 the 2 big drives for data? but then i will have to edit each VM and attach the mirrored pool?

What would you guys do ?

I would buy a second 500GB SSD for a raid1 for redundancy. Or better remove the 500GB SSD if it is a consumer SSD and get two enterprise SSDs. And I would buy a bigger HDD for backups in case you got no NAS to store them.
