We are wanting to put Proxmox on two new servers with ZFS for replication. What specifications should we follow to make this happen? What type of hard drive controller works best with ZFS?

No Raid only HBA or onbord controller without Raid(real Raid) capacity.

What specifications should we follow to make this happen?

Disks that fits to your access pattern and enough memory. It would be easier if you would tell us how much space you need and what your VM's do.
