When creating containers can one use the ref to eth0, eth1, etc2, and so on or should one make use of the actual device name from the interface config file, for example enp86s0 which is linked to vmbr0?

Thanks for confirming; guess I'm overthinking based on that I have some issues with unstability, so the eth0 ref. in a VM/CT is merely just an attribute and a name for the interface.
Then follow-up question, if you would then assign eth0 and eth1 would they then automatically correct against network interface based on the reference made with the vmbr0 respective vmbr1?

No, that has nothing to do with it. You can choose a bridge yourself if you have several available.
