I'm having to rebuild (probably reinstall) my Win 10 VM that is currently SeaBIOS/i440 to UEFI/Q35. I want GPU passthrough, and from my understanding that won'y work on a legacy VM. What I am trying to find out , what does the Win 10 license anchor to? UUID? How can I rebuild or even reinstall as UEFI Win 10 VM without losing my license?

From my experiments at my own setup I can tell, that you may use the license key as often as you like, with the only restriction, that it is only active on one device at a time. Meaning, that adding the license key to a new machine will invalidate the same key on any older machine which used that key. But because you delete your old VM, this should not be a problem.
