NAS OS or Proxmox container or ...?

I am new to proxmox and using it as a level1 hypervisor. I am looking for suggestions on setting up large storage for my PVE server.

I have two physical servers.

Server1: running Proxmox, that hosts VMs. This server has little storage space (8TB), but lots of cores and ram
Server2: no OS installed yet. This will be my storage server. low ram and cores. It has 6, 14TB hard drives. on a hardware raid controller.

I want to use Server2 to supply storage as needed to the VMs of Server1. Server1's SSD will host the OS for each VM, but deep file storage will come from Server2. Server2 would also store VM backsups/snapshots of Server1.

What I need advice on is what OS to put on Server2? a NAS OS like TrueNAS seems like a simple solution. Then adding NFS share to SErver1 that Points to Server2, but the overhead of TrueNAS seems wasteful. Google and Youtube has sent me down such a rabbit hole of options to run an NAS or a container in proxmox with a samba share. My head is just spinning now.

Would another option be to cluster my two Nodes together with shared storage. Clustering takes 3 nodes, while I don't need a 3rd server "Yet", I have seen videos about people using a Raspberry Pi for Quorum.

What is the elegant low overhead solution to setup Server2 to provide the storage to Server1?
I appreciate any advise.
