Maybe I'm missing it in the configuration but I'm not seeing a way to forward mail onto other mail servers? Ideally, I'd like to host the mail gateway at our datacenter and then forward the mails (after being processed) over to the correct mail server for that particular domain. Is there a way to do this with the mail gateway?

You have to go to System > Transports Tab.
There you will be able to add a transport server for each domain.
