I've got 6 x 6TB drives and 6 x 8TB drives. My thought was to create 2 RaidZ2 VDEV's and add them both to a pool, but I couldn't see a way to do that in the proxmox gui, do I need to do that from the command line, or am I missing it somewhere?

ok so I did this through the command line and does it kind of break the functionality in proxmox? Ultimately my goal was to mount this pool in an lxc container and share it with smb/nfs. I created 3 datasets on itm, however, I dont really see a way to mount it in the container. I can create a storage with the ZFS pool, but it seems like maybe I need to create 3 storages (1 for each dataset)? Or do I just create 1 ZFS storage and mount it in the container and deal with the datasets differently?

No.

I can create a storage with the ZFS pool

Yes.

You create the ZFS pool and add it as a storage location in PVE. Then, you provision one or more disks to the guest (VM or LXC). The guest will use the provisioned disks very much like a physical disk on a physical server. The guest will not see ZFS; instead, it will see block storage.

Or do I just create 1 ZFS storage and mount it in the container and deal with the datasets differently?

It really depends on what you intend to do with the datasets. Most people would define each dataset in PVE as storage and then provision their guests (VMs and LXCs) with a disk in each of those storage locations.
