Moving Paperless from Synology to Proxmox – ZFS? - storage advice needed

Hello,

I already run many services on Proxmox, but now I want to move my most critical service (Paperless) from my Synology DS220+ (SHR + BTRFS) to a Proxmox mini-PC server. My goal is to reduce power consumption/noise and improve speed, but without compromising data integrity compared to the Synology.
1/2 TB effective storage should be enough.
I have no experience with ZFS, i just used one disk and i think ext4 in proxmox so far.

What is the best/safest storage configuration for my use case?

Hardware:
  • HP Elitedesk G4 Mini PC
  • 2 × NVMe slots
  • 1 × SATA 2.5" slot

Usually, I use an Ubuntu VM for Docker and a OMV VM for managing and sharing storage among VMs/containers/other devices.

Options I’ve discoverd:

a) 2 × NVMe with ZFS for all + simple LVM volume for OMV
→ Which NVMe models are best here? Seems tricky due to endurance.

b) 1 × SATA SSD for boot + 2 × NVMe ZFS in Proxmox and then to OMV
→ Possible cooling issues due to SATA SSD above NVMe.

c) 1 × SATA for boot + pass through both NVMe drives to OMV and use Btrfs inside OMV
→ RAID inside a VM might be problematic.

Are there better options than these three or which one would you recommend?
Which SDDs would you recommend?
