I have a dell r710 where I ran Proxmox. Could I just pop the drives out, put them in my dell t320, and boot it up, or would I need to do a complete re-installation? If so, is there any easy migration process I could do?

PVE will run on nearly any machine. So in general it should be fine to just move the disks between the servers. But you will probably need to connect a keyboard+display or use webKVM to edit the network settings because the NIC names will change so neither SSH nor webUI will be accessible. In such a case a ip addr to find out the new NIC names, a nano /etc/network/interfaces edit the network config with a systemctl restart networking later should do the job.

Hi,
had the same topic.
I created a cluster and migrated the VMs to the new PVE-Host
