I'm looking for a tutorial / instructions of how to setup the Proxmox metric server, connect it to InfluxDB and Grafana - Help will be highly appreciated

Assuming you already have InfluxDB running (if not, google it, it's not PVE related):

Datacenter -> Metric Server -> Add -> InfluxDB

and put in your configuration. Done.

I the Server: <IP Addr> that of the Proxmox node or of the Influxdb host IP?

Why would you add the IP address of your proxmox node in the GUI of the proxmox node?
You add the metric server, as the path the setting describes, so of course it is the IP/DNS entry of your metrics server.
