I have a server with a CPU that has 4 cores and 8 threads. In the proxmox GUI i see only 8 CPU.
I can only make a KVM container with only 8 VCPUs.
Is there a way to use more of VCPUs for a cointainer? and Way only 8 CPU are displayed in the GUI?

This sounds like exactly what the case should be. You have an 8 thread CPU so you can only allocate 8 threads (or cores) to a VM. If you could explain more in-depth maybe you're having an issue I don't understand.

i have 4 cores with 8 threads so the total of cpu must be 32. But it seems thet Proxmox only detect 1 core and display only 8 cpu.

That's not how that works, Each core doesn't have 8 Virtual CPU's (Threads). Each core has 2 Virtual CPU's (Threads). I'm gonna take a shot in the dark and say you're using an Intel processor because this is their most common set-up. I would look into Intel-Ark and more information on your processor prior to proceeding.

So, you have a 4-Core 8-Thread Processor. Not a 4-Core * 8-Thread Processor - That is technology for the future. I can almost promise you that your setup is fine and make sure you do good research before really putting these settings to the test. The only way you could have 32 total VCPU's is if you had 4 Sockets filled with your current processor.
