To give a bit of background here: I have very basic knowledge on how to use linux/proxmox. I had an issue with this server not working and ended up needing to replace the PSU to resolve the issue. In the troubleshooting steps, I disconnected all of the HDDs connected and didn't plug them back in where they were originally connected. I also have 2 NICs on the PC and I can never remember which port I use but I'm pretty sure I have it in the correct port (I really need to start labeling things). I'm using a known good ethernet cable and have tried both ports rebooting each time I switched them. I cannot ping the gateway or anything on the network from the proxmox, I cannot SSH into it, and its not showing anything connected on my firewall.

Your network card changed name from enp6s0 to enp5s0 so change it in /etc/network/interfaces and reboot.
