If I put a PERC H730P Mini in HBA mode, then run a ZFS mirror on SSD on it (for my boot drive), will I be able to hot-swap a failed drive?

I've got the PERC in HBA mode now and it runs zfs just fine. Since it's not in hardware RAID mode I believe that I'm safe to install zfs on it. What I don't know is if I will still be able to hot-swap out a failed drive in this mirror. Any insights are greatly appreciated.

If one of your boot disks fails you need to do alot of stuff. Its not just swaping out the disks. See here under "Changing a failed bootable device".
You also need to tell ZFS to replace the disk, you need to format the new drive and copy the bootloader from the healthy drive to the new one.
But I would guess hot swapping should work. If you really want to be sure you should you should just test it and unplug a disk and reconnect it while your server is running but is not in productive use.
