I want to perform a rollback in Proxmox. There is no snapshot or backup.

I don't have a backup, I don't have a snapshot, but I want to undo a rollback I accidentally performed in Proxmox. What should I do?
 
"a rollback" from what? is your glas empty?

do you have setup a zfs pool with the addon of zfs-auto-snapshot and add this to your selected zfs dataset?
zfs list -t snapshot -r <your-pool>

I have a Windows Server virtual machine with a database. The rollback button was accidentally clicked, resulting in the loss of a year's worth of data. I want to undo the rollback to restore the current state, but I don't have a snapshot or backup.

on what filesystem is this VM running on the proxmox ve host?

ask you how do the proxmox ve server snapshots. look there.
