I need a graphical interface on my PVE server

Hi everybody,
I live in France (ok nobody is perfect) and ours childrens must use an application to be connected to the school (to have some courses, exercices, to know when a teacher will be out of the school one more time, etc.). So my childrens steal my PC :( and when it's time to sleep my PC is available. And that's when I crack, I've had enough!
In the depths of my garage, I started working on PVE. At over fifty years old, I like challenges. So, to access a PC, I need to add a graphical interface to the PVE server so I can:
- read my emails (Thunderbird),
- browse the web (Firefox, Chrome),
- play role-playing games via videoconferencing (Google Meet, Roll20 and in a near future a virtual tabletop).
I know a little bit about Debian and PVE (beginner level plus one month). I know it's not a good idea to do anything other than virtualization on a PVE server. But I don't really have a choice, and I'm willing to take the risk because I'm tired of managing my business online between 11 p.m. and midnight.
So I know GNOME (and I don't have any preferences in terms of graphical interfaces). I understand that the less I disturb PVE, the better. I'm willing to try Xfce, or another one, because it's lightweight and may disturb PVE less.
I've done a few tests without much success. But I've learned a few things and so I went to bed a little smarter (e.g., it's not possible to install GNOME on PVE because the packages are not available on the PVE repositories—as I said... beginner level... - ; and a few battles with the shell or bash, in short, things that are different from GFA Basic or Turbo Pascal).
So before I crashed my server again with an attempt based on several bits and pieces from web pages, a neuron woke up and here I am.

Which graphical interface do you recommend I try?
How do I install it correctly, please (be generous with the shell commands, it's the holiday season)?
To launch it, I found that you use “startx”. Is that right?

Not sure why you don't create a full VM with an OS for your use & another one for your Kids. You'll be able to have full backups & restore at any time.

If I create 2 VM (one for my childrens and one for me) I need a PC to connect to my VM or I have to manage properly the sound, the webcam. And I prefere that my son does not touch the server. He already tends to look for my phone's PIN code, so I don't want to find a Minecraft server on my server :eek:.
