Help me create NVME pool

That depends...consumer SSDs are crappy slow if it comes to sync writes and might die very fast. It's not recommended to use consumer/prosumer stuff with ZFS. And nealy all M.2 SSDs are consumer SSDs, because enterprise SSDs need more space for additional spare NAND chips to increase the life expectation and capacitators for the powerloss protection that enables them to cache sync writes. Enterprise SSDs usually also use NVMe but use U.2 connectors and a 2,5" form factor.
There are adapters to connect a U.2 SSD to a M.2 slot. But for that your carrier card should got a removable heatsink because of the cables.

Another thing is PCIe bifurication. You need to check if your G8 servers mainboard got a bifurication chip onboard and that your BIOS allows you to select how to use a PCIe slot. You need to be able to change the config of a physical PCIe slot between "16x" and "4x4x4x4x" for a quad M.2 carrier cards or "8x" and "4x4x" for a dual M.2 carrier card.
If your mainboard doesn't support bifurication you need to buy very expensive M.2 carrier cards that got a bifurication chip.
