Getting "Connection Error" recently

Hello, I need some assistance with my Proxmox. I am a noob when it comes to Proxmox, but have done what I thought to have tried and now stuck where to go at this point.

The other day, everything was working fine, but then all of a sudden, I noticed that my Emby had gone down and one of my Windows servers within Proxmox. I tried to access the GUI, but couldn't connect, so I performed a hard reboot on the minipc I am using. Once it was rebooted and was in the GUI, it started doing the auto reboots, and soon it crashed again with an error "Connection Error" popping up. I rebooted again and quickly stopped the auto-reboot process, and then turned off the auto-boot on all my servers/containers.

I noticed that if nothing is running at all, Proxmox is stable, but the moment that I spin up something or even try to do a backup, it crashes. I did some searching and found an article about there possibly being a hanging issue with the Intel NIC on my device (I219-LM). I followed this article, but still getting the same issues:

I was originally on Proxmox 8.3.1 and was able to upgrade to 8.4.1 without issue, thankfully.

I did notice that when it crashes, I cannot access it from any web browser, whether it's my PC or phone, or the Proxmox app. I cannot even SSH to it, but I can ping it.
The minipc is connected directly to the router, I swapped out cable, heck I even thought it could have been overheating, so I repasted.

I wish I could get some things backed up, and then I would even consider just starting over, but as mentioned, I cannot even get backups to finish before it crashes.
