Can I set different retainment periods, e.g. for certain vms? Or is it a global setting?

Do you mean backup retentions? There are 3 different backup retentions. The one you can set for the backup job in the PVE webUI. Here you could create different retentions by using different jobs for backing up different guests.

Then there is the backup retention for the PBS storage in the PVE webUI. This is global for the whole PBS storage and will only be used if no retention is set for the backup job.

Then there is a third retention and that is the retention you can specify in the PBS webUI for the datastore. This will retention will be performed in addition to the two retentions from the PVE webUI. Whatever retention is shorter/smaller will prune first.
