Dell R550 fails to boot in UEFI mode

I've been using my Dell R550 with an installation of Proxmox for over a year now. But sometimes I've had the issue of it not being able to boot, but after some attempts it works.
Now it won't boot at all with the same issue as always. The server is set in UEFI mode and Proxmox was installed in this mode.

I have 3 physical drives connected to the PERC H355 RAID controller. All the disks are set to non-raid and are just passed through.
On boot it does detect all 3 disks but it then fails on:
Booting from proxmox Boot Failed: proxmox.

No boot device available or Operating System detected.
Please ensure a compatible bootable media is available.
When looking in the BIOS I can see the first boot option is: "unavailable proxmox".

I'm hoping to get my server back up and running as soon as possible but I'm out of ideas. I've tried setting the BIOS mode to BIOS, but then it does not find any bootable media on drive C:.

EDIT: After using the "rescue boot" option I figured out that there's nothing on the boot disk, using `fdisk -l`. There's only a single small MRP partition of 16MB. Not sure what happened here but it seems like my whole host/boot SSD got wiped? I do seem to be able to write to it without problems.
