It wasn't very obvious to me and hope it helps others.
If we wish to change the IP or host name or other parameters of the Virtual Machine, in the left menu choose Virtual Machines.
On the right hand bottom portion, the VMs are listed. Click on the row containing the VM Info and you will get into the VM Configuration Menu. On the Network tab, you can change the IP, hostname, etc and save and restart the VM.
The actual info resides in the host machine at /etc/vz/conf/XXX.conf where XXX is the Virtual Machine Number.
Other files in the host machine managing the VMs are at:-
/etc/qemu-server/XXX.conf
/etc/ssh/ssh_config
/etc/ssh/sshd_config
