In the system requirements section, there is a General description of compatibility with amd processors. Is there official information about compatibility with first-and second-generation amd epyc processors?

PVE is a Linux distribution using the Ubuntu kernel with a few modification.
This means if Ubuntu supports it it should run with PVE.

That being said - we do have a few Epyc systems (both first and second gen) running here - and they work quite well.
