Advices on new proxmox setup with truenas vm

Hello,

I'd like to start with Proxmox :)
I've been using ESXI for pfsense, HomeAssistant, Xpenology etc for years.

Got a new small topton pc with 2 nvme disks and 2 sata ssd's. I've bought 2 nvme 2to and got old smaller sata ssd's. No ECC 64Gb ram.

I'm not sure about RAID and ZFS.
I'd like most flexibility for storage allocation.
I think I'll set up local and cloud backups of my VM's.
I understand restoring vm backup would take time, but it's fine, I don't need quick restore for getting things back and running immediately in case of issue.

Would using virtual disk in TrueNAS be ok? So I could allocate space when needed?
Would proxmox vm backup include both OS and stored data? (especially for data stored on Truenas virtual disk)
