Or do you mean, how do you connect an existing store to a PBS Server?
I followed your instructions, but I eventually crashed all my VMs with an I/O error probably since I exceeded my VM Drive space.
I had to clean things up and add the drives back and attach the existing datbase to my PBS Server.
So I did as you suggested/
I had datastore store1
But it wasn't showing in my PBS Server with some errors.
I had errors for datastore 1, 2 and 3.
Anyways. I also deleted my datastore using proxmox-backup-manager datastore remove but couldn't link it back.
So I made sure my store1 was renamed to store1-old or something.
I created a new datastore store 1.
After that I rm -r /backup/disk1/store1
and then mv /backup/disk1/store1-old/ /backup/disk1/store1
After doing that it showed up in my PBS Server.
I was missing my store2 as well, so I did the same thing to make the store2 reappear.
I have not backed up my vm yet, but will this evening as the office closes for the night.
It seems to work, but I have not tested it out yet.
If this isn't what you are looking for, perhaps more details would assist in finding the correct answer.

Sorry I just looked at it again and saw the details about the existing chunks.
I think I created a new store and deleted everything inside it, then changed the existing store name to match the new one that I created.
If you have the option, I guess you could also create a store which matched the name of your existing one, which is one lest step of having to rename it...
My existing backup from a couple weeks ago has started now, but it's still in its infancy stage so I'll report if it goes through properly.
