you'll have to decide based on your resources. you could use an external disk to backup your VMs and configs, and then reinstall the node from the ISO and put them back.
maybe you can set up a proxy server infront and allow the update domains (like debian.org and proxmox.com) to pass. then you could upgrade without trouble by following our guide again (same link, different section)

It's a bit dated but the principles should still hold up nowadays.
FWIW, major upgrades are not really tested using the ISO and depending on what extra packages got installed there may be required more than what the ISO ships. So, I'd suggest testing this on a testbed first, if you got no HW you could also setup PVE in a VM.
