I tried to uninstall proxmox by running

Bash:
apt remove proxmox-ve

However, afterwards every apt command fails with

Code:
/bin/sh: 1: /usr/share/proxmox-ve/pve-apt-hook: not found
E: Sub-process /usr/share/proxmox-ve/pve-apt-hook returned an error code (127)
E: Failure running script /usr/share/proxmox-ve/pve-apt-hook

How can I remove proxmox packages from the system?

Its theoretically possible, but wouldnt make sense to do this on a system that was installed using Proxmox ISO.
It may make more sense to do it if you originally installed Debian with PVE on top of it. Even so, a much cleaner approach is to re-install OS.

I havent tried this operation and, I suspect, the issue you are seeing is not the only underwater stone you might hit. That said, for this specific issue running this command should give you enough of a hint on what to do:
" grep -R pve-apt-hook /etc"
